Carrots + orange is a fav combo & thats how we make ours. Layered the cake with a thin layer of cheese cake frosting as I only like to go overboard with frosting on cupcakes 😬 Garnished the cake with carrots boiled in water, sugar, walnuts & ginger. 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬 & 𝐌𝐞𝐭𝐡𝐨𝐝 150ml vegetable oil, 1 cup (220 g) brown sugar, 2 eggs (room temp), Zest of 1 orange + juice, 1 tsp vanilla extract,1.5 cups whole wheat or all purpose flour (225gms), 1 tsp baking powder, 1/2 tsp baking soda, 1 tsp cinnamon powder, 1/2 tsp nutmeg powder, 1/4 tsp salt, 2 carrots grated, 50 gms each walnuts, raisins, dates pitted. 🥕Preheat oven to 180°c , grease your cake tin with butter and line with parchment paper. I’ve used a 9 inch cake tin. 🥕(Optional) Boil 150 ml water turn of heat and soak raisins and dates once cooled mix in baking soda & set aside. This makes the raisins juicy. If you are skipping this step just add baking soda to the dry ingredients. 🥕Sift and mix in all the dry ingredients flour, spice powders, baking powder, salt. 🥕In another bowl beat oil + brown sugar+orange zest + vanilla extract until sugar is combined, add one egg at a time and beat until smooth. Adjust sugar if needed. 🥕Now fold in half flour and half orange juice – repeat process. Fold in soaked raisin & dates with the water. Add in carrots & chopped walnuts dont over mix. 🥕Transfer to baking tin & bake for 25-30 mins or until a skewer inserted comes out clean. Let it sit in the tin for 10 mins then transfer it to a cooling rack until completely cooled. Its ready to be eaten this way or you can top it with cream cheese frosting & other garnish. . .
